Chocolate covered Oreos never disappoint. So when I saw the recipe for Brownie Covered Oreos at Picky Palate I assumed they would have the same result. Assumption correct! Just as she says the cookies are soft inside almost like little cakes. I actually prefer soft Oreos (usually meaning stale) and I don’t care if you think I’m weird! Also, I decided to cover the entire thing with chocolate, instead of just drizzling, and put it on a stick. Finished off by wrapping in plastic wrap and tying off with curled ribbon. Perfect for handing out during the holidays :-).
Ingredients:
1 Brownie mix (or use your own brownie recipe)
1 package Oreos (I used Winter Holiday red ones)
Popsicle sticks
White chocolate bark candy coating, melted over double boiler
Sprinkles
Directions:
- Preheat oven to 350 degrees. Prepare brownie batter according to package directions. Leave in mixing bowl.
- Dip Oreos in brownie batter then place in bottom of cupcake tins that have been generously sprayed with cooking spray. Bake for 12-15 minutes, until brownies are cooked through.
- Let cool for 5 minutes. Take a plastic knife and run along the edges so you get the cookie out with brownies not stuck to pan.
- Line a baking sheet with wax paper.
- Insert popsicle sticks into the sides, about 1 inch, and dip into chocolate to fully coat. Set on prepared baking sheet, sprinkle and let set.
Have leftover brownie mix? I made mini muffin-brownies and dipped the tops into the chocolate!
