These caramelized white chocolate spritz cookies are not only amazingly delicious, they are helping to fight pediatric cancer.
Let’s talk about the magic that is caramelized white chocolate and how it can save kids from cancer. I already am a huge fan of white chocolate and caramelizing never is a bad thing so when first heard the term “caramelized white chocolate” I knew I had to get in on it. Other than requiring you to hover near the oven for 3 to stir every 5 minutes for 30 minutes, it is actually easy to make. All you need is some good, real white chocolate (none of that candy coating stuff), a clean rimmed baking sheet, and a spatula. And an oven of course. I actually made mine in a toaster oven! Just please, please be sure there is not a single drop of water on any of your tools. Water will cause the white chocolate to seize which is not a fun time.
At first while melting the chocolate, it may appear a bit dry. Don’t worry! It will smooth out just have patience and don’t immediately toss it in the garbage (unless you got water in it, in which case you may want to start over). Every time you stir the chocolate around you will notice it getting creamier and tanner. After 30 minutes it will resemble peanut butter (a little darker than the pictures I have because unfortunately I forgot to take shots of the final product). Take a taste and get excited because that stuff is going into cookies!
