Chewy M&M Chocolate Chip Cookies & KitchenAid Giveaway

Nothing beats a classic chocolate chip cookie, but adding some M&Ms is certainly not going to upset anyone either.

Sorry not sorry, but I cannot stop making cookies. Even since Indulgence Ice Cream and I teamed up I’m overflowing with ice cream sandwich ideas. It is being fueled even further by the fact that one of said ice cream sandwiches is now being sold at a restaurant in town – Spagio Wine Lounge! This past weekend was the first time it was available and I’m anxious to hear how it sold. Especially since next weekend they are throwing us a party and we hope there’s reason to celebrate and I will need to make a lot more!

The ice cream sandwiches being sold at Spagio are the lemon ricotta and blueberry sugar cookie sandwiches that were made with my chewy sugar cookies that people cannot get enough of on their own. But until this point sugar cookies were not what I was known for, it’s my favorite chewy chocolate chip cookies and one of the most popular recipes on my blog! Clearly I agree as I’ve made countless variations of that recipe with different mix-ins. And today I’m adding one more to the list.

While adding mini M&Ms is not mind blowing when it comes to a variation of a chocolate chip cookie, It’s still worth sharing, because um chocolate chip cookies. Duh. When I told Dan of Indulgence Ice Cream that we needed to do a chocolate chip cookie ice cream sandwich we agreed that plain vanilla or at the very most chocolate chip or malted vanilla would pair best. He ended up getting fancy on me (which I am not upset about) by making stracciatella ice cream.

The combo was obviously delicious but I think I’d still prefer a simpler pairing with just vanilla (or malted vanilla at the most). Not to toot my own horn but my chocolate chip cookies have and his stracciatella ice cream have such good flavor on their own that they kind of compete with each other. It’s like with the sugar cookie sandwich – you have a complex flavor profile for the ice cream paired with a simple cookie and you have perfection. Not that a chocolate chip cookie flavor is complex but I think it follows the same trend in reverse and needs a simpler ice cream. At the end of the day? I’d still inhale more than one of these as is.

CHEWY M&M CHOCOLATE CHIP COOKIES

Makes approximately 3 dozen cookies

Ingredients:

2-1/4 cups all-purpose flour, spooned and leveled

1 tsp baking soda

1 tsp salt

1 cup (2 sticks) unsalted butter, melted and cooled

1 cup packed dark brown sugar

1/2 cup white sugar

1 Tbsp vanilla extract

1 egg + 1 yolk, room temperature

2 cups mini M&M’s

1-1/2 mini semisweet chocolate chips

Directions:

  1. Sift together the flour, baking soda, and salt; set aside.
  2. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended (1-2 minutes). Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients in three batches until just blended. Fold in the chips by hand.
  3. Rolls 2 tablespoons of dough into a ball that is slightly taller than wide and place on a plate or tray. Cover tightly and chill for at least 2 hours, but overnight for best results (Iโ€™ve refrigerated for up to a week).
  4. Preheat oven to 375 degrees. Line cookie sheets with silicone baking mats (or parchment paper); set aside.
  5. Place cookie dough onto the prepared cookie sheets, about 2 inches apart.
  6. Bake for 8-10 minutes or until edges are barely golden (will look underbaked). Cool on baking sheets for 10 minutes before transferring to wire racks to cool completely. Store at room temperature in an airtight container.

Those cookies look so freaking delicious! I love those mini m&ms because then you get one in each bite :)
