It feels weird to not be preparing for some sort of holiday. Since Thanksgiving it’s been non-stop with Christmas, New Years, Valentine’s Day, St. Patrick’s Day, and then Easter. Now I feel strange not having some kind of theme to ascribe to when planning my meals. But the good news is that means we can eat whatever we want this week! Including my gnocchi with asparagus and garlic-gorgonzola sauce, blueberry vanilla pancakes for breakfast and gluten-free peanut butter compost cookies for dessert.
