We have become obsessed with coconut recently! From coconut chips, to coconut granola, to coconut water, we always have some variation in the office. Canโt wait to add these cookies to our coconut lineup!

I looooooove shortbread so much. Most people’s favorite sweets seem to be chocolate or peanut butter or caramel, and while I love all those, I love shortbread even more. And with coconut? I’m intrigued! off to check out the recipe!
