This super veggie sandwich is packed with so much goodness you won’t even notice the lack of meat. Easy to prepare and highly addicting.
This sandwich was originally made without the intention of ever posting it to my blog. It’s creation was actually the result of trying desperately to find something to eat without having to cook or go to the grocery store. Thankfully for me, I tend to keep my fridge pretty stocked with fresh foods and even though it’s a rare day that I eat a sandwich I also happened to have bread. It was meant to be. And then it kept happening over and over again on purpose. I even would bring the components, separated in my lunch bag, so that I could assemble it fresh and not have a soggy sandwich for lunch. That extra effort is when I realized I needed to spread the word.
It’s time to declare that hummus as a condiment is the best thing that has happened to sandwiches in a long time. I’m not really a sandwich person, unless it’s a super stuffed hot sub but even those come around rarely. But this sandwich? I’ve already made it 5 times and I can’t stop. Garlicky hummus, fresh kale, tomato, red onion and even avocado which will win be over every time. My brain says “Oh there’s avocado in it? I want!” A coworker of mine actually was impressed by how very “super food” it was and I didn’t really intend for it to be that way. As you can see from the photo below, sometimes I even get desperate and will assemble this beautiful sandwich on white bread. Gasp.

SUPER VEGGIE SANDWICH
Makes 4
Ingredients:
8 slices sprouted whole grain bread
4 Tbsp roasted garlic hummus
1 large kale leaf, chopped
1 large tomato, cut into 4 slices
Sliced red onion
1 avocado, peeled and smashed
Directions:
- On four of the slices of bread, spread 1 tablespoon of hummus on each. Top with kale, tomato, and red onion.
- On remaining four slices of bread, spread 1/4 of the avocado on each. Sandwich on top of the other 4 stacks and serve immediately.

Love that this has both avocado and hummus! I tend to use one or the other as a sandwich spread, but together sounds so delicious and creamy!
