Pumpkin Pecan Oatmeal 2

This oatmeal was a spur of the moment improvisation by my dad. I had some leftover homemade pumpkin puree and he decided to try it in his trusty oatmeal recipe, substituting for the chopped apples. The result was pumpkin pie in oatmeal form! I even put some spiced pecans on top.

If you’ve never had homemade oatmeal before you are severely missing out. Nothing beats a warm bowl of homemade oatmeal in the morning, especially during the cooler fall months and it couldn’t be easier to make. This morning my dad and I are going on a hike to see the fall colors and I may need to make another batch of this in preparation.

One year ago: Pumpkin Popcorn Balls

Two years ago: Caramel Apple Cinnamon Roll Cupcakes

PUMPKIN PECAN OATMEAL

Serves 4-6

Ingredients:

3 cups milk

1-1/3 cup old-fashion oats

3 Tbsp packed brown sugar

1 Tbsp unsalted butter

1 tsp cinnamon

1/2 tsp nutmeg

1/8 tsp ground cloves

1 cup pumpkin puree

1/2 cup chopped pecans

Directions:

  1. In a medium saucepan, bring milk and water to a boil. Stir in oats, brown sugar, butter and spices.
  2. Cook until you reach desired thickness, about 10 minutes, stirring occasionally.
  3. Remove from heat and stir in pumpkin and pecans. Cover and let stand for a few minutes before serving.

I love flavored oatmeal. I had maple brown sugar this morning and topped it off with my pumpkin granola. So good!

Funny…I was going to use my leftover puree in oatmeal yesterday and when I opened the oatmeal box the dang food moths had taken up residence. The oatmeal went to the pigs and I had a bagel.
