This oatmeal was a spur of the moment improvisation by my dad. I had some leftover homemade pumpkin puree and he decided to try it in his trusty oatmeal recipe, substituting for the chopped apples. The result was pumpkin pie in oatmeal form! I even put some spiced pecans on top.
If you’ve never had homemade oatmeal before you are severely missing out. Nothing beats a warm bowl of homemade oatmeal in the morning, especially during the cooler fall months and it couldn’t be easier to make. This morning my dad and I are going on a hike to see the fall colors and I may need to make another batch of this in preparation.
One year ago: Pumpkin Popcorn Balls
Two years ago: Caramel Apple Cinnamon Roll Cupcakes
PUMPKIN PECAN OATMEAL
Serves 4-6
Ingredients:
3 cups milk
1-1/3 cup old-fashion oats
3 Tbsp packed brown sugar
1 Tbsp unsalted butter
1 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp ground cloves
1 cup pumpkin puree
1/2 cup chopped pecans
Directions:
- In a medium saucepan, bring milk and water to a boil. Stir in oats, brown sugar, butter and spices.
- Cook until you reach desired thickness, about 10 minutes, stirring occasionally.
- Remove from heat and stir in pumpkin and pecans. Cover and let stand for a few minutes before serving.

I love flavored oatmeal. I had maple brown sugar this morning and topped it off with my pumpkin granola. So good!

Funny…I was going to use my leftover puree in oatmeal yesterday and when I opened the oatmeal box the dang food moths had taken up residence. The oatmeal went to the pigs and I had a bagel.
This is really how I need to be starting my day! Sounds like the perfect breakfast.
