I know that when you think of party food, dates do not normally come to mind (unless youโ€™re thinking of bringing someone as a date). But when you stuff something with cheese and then wrap it in bacon, thereโ€™s really no way you can go wrong.

With these dates, the combination of sweet and salty is perfection and it couldnโ€™t get any easier. Mix up goat cheese and cream cheese for the filling, and swaddle that baby in bacon. Serve them up and watch them disappear, turning skeptics into addicts.

Ingredients

  • 4 oz. goat cheese, room temperature
  • 8 oz. cream cheese, room temperature
  • 48 pitted medjool dates
  • 24 slices of bacon, halved

Directions

  1. Preheat oven to 350 degrees. Line a baking sheet with foil and lightly coat with nonstick spray. Set aside.
  2. In a medium bowl, blend together the goat cheese and cream cheese.
  3. Cut a date lengthwise on one side, so that it becomes a little pouch. Repeat with remaining dates.
  4. Assemble by spooning the cheese mixture into each date. Wrap each date with a piece of bacon, so that the seam is on the bottom, and place seam-side down on the prepared baking sheet. Bake for 25-30 minutes or until bacon is cooked and crispy.

Can I make these and freeze them?

I have not attempted it myself but you could. Freeze after wrapping with uncooked bacon. When ready to cook thaw and cook and normal.

I’ve had something very similar to this at a tapas restaurant except it was stuffed with an almond… it was so good! I haven’t even though of making them myself until I saw this recipe. This is definitely a must, thank you!!

I love bacon wrapped dates! I never considered adding cheese to the mix, but it sounds genius!

I had some bacon wrapped dates at a restaurant a few years ago and they were incredible, but they weren’t stuffed with GOAT CHEESE!!! MMMMmmm I’ve got to try these. They seem super fancy, but are so easy!
